Your Help Is Needed

Dearest Blogger Buddies,
                                        I really really need your help! As y'all know I am from the great state of OK, we eating nothing but unhealthy fried food. I am in desperate need of some help picking out a few healthy meals. Now just so y'all know, I am NO Betty Crocker. They need to be simple enough for my little brain to comprehend! I am making a grocery list for tomorrow and I am hoping to have a few meals picked out to try.
If anyone of you have any ideas please let me know!

  1. Grilled chicken and a side of steamed veggies, or a tofu stir fry with some kind of low calorie sauce... both cooked with non-stick spray and not oil of course. You can also buy the 96% lean ground beef and make low fat burgers on whole wheat buns with a side salad and low-fat dressing, or you can make turkey burgers too which are even healthier. I love a taco salad, with the same extra lean ground beef on shredded lettuce topped with your favorite salsa and a dollop of fat free sour cream. You can do shredded chicken tacos; use breast meat, with corn tortillas, chop up some tomatoes, low fat cheese and low fat sour cream.

    Just remember, portion control too! Just because it's low fat, low cal doesn't meant you can eat a ton of it. :)

  2. Aha! Thanks so much! I love 96% lean ground beef, it's all I buy. & yes I hate portion control! It's so hard, I am trying to eat slower so my brain has time to tell me that I'm full! Haha.

  3. One of my all time favorite healthy meals, is one that I made last night. Tomato Mini Pizza's soooo easy to make. All you need is a bag of round pita bread (not the ones that are pre cut) 2 table spoons of olive oil, low fat/skim milk mozzarella, and 2 Roma tomato's.

    Heat the oven to 350, cut up the tomato's into very thin slices (these are gonna act like your pepperoni)drizzle a little bit of the olive oil on each of the pita's, sprinkle a bit of the mozzarella cheese on each and top with the tomato slices. Pop them in the oven for about 10 mins and whala! Almost instant yummy-ness! :)

  5. I just bought this book "cook this, not that." I love cooking, but it gave me easy tips to make simple dishes that are healthy. I have tried a few and they are delicious! Entrees, apps, and desserts. I highly suggest it!
